(SHMALTZ) HE’BREW DEATH OF A CONTRACT BREWER COMMEMORATIVE BLACK IPA

Celebrating its newfound independence with a friendly dismissal to ‘contract brewers,’ complex 7-malt/ 7-hop Cascadian Dark Ale piles dark-roasted mocha malting to less distinct dried fruiting and acrid charcoal-burnt pine ash. Dark chocolate, dusty cocoa and stove-burnt coffee crowd earthen peat midst, where pineapple, grapefruit, apple and orange undertones fight for space. Distant walnut, cola nut and Brazil nut illusions deepen overall mocha richness.

On tap at Dog & Cask, rich dark chocolate malting, kiln-roasted coffee bittering and piney hop-charred fruiting find a balanced blend. Capacious grapefruit-pineapple-lemon tang leaves permanent impression upon heavy mocha molasses romp. Ashen pine embers and resinous evergreen cinders bring mild pungent acridity to burnt black bread bottom.

PRETTY THINGS BARBAPAPA IMPERIAL RUSSIAN STOUT

Sludgily rich and immensely creamy high-gravity Imperial Stout (12%abv) magnifies chewy dark chocolate syruping with glutinous anise affluence, tarry molasses sugaring and densely compact roasted barley flakes. In the midst, fudgy chocolate-caked sweetness serenades black cherry, bourbon and burgundy sentiments. At the finish, hickory-smoked mocha malting spreads across tertiary chocolate eclair, chocolate truffle, chocolate liqueur and cappuccino undertones.  

 

 

ATWATER VANILLA JAVA PORTER

Better updated version (2013) loads creamy French vanilla bean roast and lovely milked coffee sedation into caramel-burnt hop char. Fudgy black chocolate midst contrasts raw molasses bittering and wavered black pepper snip. Latent cappuccino hints abound. 2019 version let mildly creamed cocoa-dried vanilla bean bittering hover alongside cedar-seared Blackstrap molasses hop char, but minor phenol aridity beckons.

(ATWATER) STATE FAIR PALE ALE

Sessionable and well-rounded moderation thrusts illustrious honey fruited bouquet into mild grassy hop resin. Sweet peach, nectar, mango and mandarin orange vibrancy fades slowly as bitter lemon-seeded yellow grapefruit and pineapple briskness increases. Some musty cellar dankness disrupts its delicate crystalline flow.
