DOGFISH HEAD NOBLE ROT

Moderate dry-bodied farmhouse ale in a can utilizes ‘assertive’ cardamom pod spicing to placate sour citrus entry and herb-roasted follow-up. White-peppered lemon verbena, yellow grapefruit and banana bread illusions settle alongside ginger-rooted green and black tea nuances. On further inspection, herbaceous chamomile, basil and peppermint notions pick up steam.
On tap at NJ Beer Expo ’13, traditional dry-bodied farmhouse ale offers approachable sour-fruited candied citrus whimsy. Lemon-curried honeydew, melon and banana dot Belgian fungi yeast to grassy hay bottom. Salty black peppered snip perks up yellow-fruited misting.
Defying timid golden ale designation and much better defined as a fruitier saison, action-packed full body tosses peppery herbal-hopped briskness and honeyed rye graining at sleek citric-spiced persuasion. Lemon zest, naval orange, pink grapefruit, honeydew, peach, nectarine and banana illusions caress crystal-sugared malts. Mild sage, rosemary and woodruff seasoning brings musty twilight setting to lovely all-around fruiting.
Frustratingly chaotic, yet stylistically ubiquitous, limited edition (2012) saison places cluttered fruit lacquering above salty white-peppered hop bite. Cloying raspberry rasp picks up ancillary orange-bruised apple, peach cobbler and banana illusions as well as vanilla pastry sugaring. Buttered rum spicing adds alcohol luster.
Headily herbaceous chartreuse-hazed barnyard ale retains weedy citric pungency as black tea-like bittering ascends above lemon-rotted orange compote and soured grape esters. White-peppered sage-thyme seasoning and musty cellar-like Belgian yeast funk addle dry horse blanket parch.

On tap at Morris Tap & Grill, dry yellow-hazed farmhouse ale brings tart green apple souring to lemony grapefruit bittering, vinous green grape pucker and wafting cinnamon toasting. Prickly peppered hop spicing works its way into gentle oats-flaked earthiness and musty horseblanket musk as herbal tea respite increases. Miniscule ginger, cardamom, grains of paradise, nutmeg, clove and anise reminders tingle serene quince theme. Lovers of Granny Smith apples should come aboard.
