On tap at Bronx Alehouse, mildly dry farmhouse-styled grisette aged on French oak-barreled Sauvignon Blanc lets floral-herbed tart fruiting linger subtly above smooth mineral-grained white wheat malting (reminiscent of a light pilsner). Kaffir limed white wine souring gains delicate ‘Asian pear, gooseberry and lychee’ illusions at the phenol-spiced midst. Serve to saison, gose and Berliner Weiss fanatics.

2ND ACT DEEP CUTS SAISON

On tap at Poor Henry’s, voluptuous renegade saison buttresses stylish Hallertau Blanc-hopped Sauvignon grape, gooseberry and lemongrass tartness with tenacious clove sugaring and equally sweet cherry-wined cinnamon and nutmeg spicing. Pale wheat-malted barnyard leathering and light citrus spritz hold up the dry end alongside latent herbal nuances. The blend’s original, insistent and decisive.

PIPEWORKS ANY OTHER NAME SAISON WITH ROSE PETALS & ROSE HIPS

Effervescent yellow-cleared bantam relies on active saison yeast to awaken its wafting floral-perfumed rose petal sweetness, crabapple-like rose hips tartness and lime-dried lemon hop souring. Mild barnyard acridity and slight cellar musk found beneath the surface. Lovely red rose luster also benefits from citric-spiced lemondrop, mandarin orange and tangelo illusions.

ANGRY ERIK VARAISON

On tap at Shepherd & Knucklehead – Haledon, discrete ‘fusion’ between contemporary gose and saison weds the mildly citric-salted acidity of the former with the dry herbal barnyard acridity of the latter. Lemon-dropped yellow grapefruit souring, tart orange juicing, white grape tannins and floral daubs align above biscuit-y pilsner malting for crisply clean farmhouse ale.
