Syrupy black chocolate drapes ancillary strawberry, blueberry and bruised cherry illusions while contrasting extracted vanilla bean bittering. Phenol hop-charred astringency creates charcoal-like acridity.
BIG BOSS HELL’S BELLE BELGIAN STYLE ALE
Murky medium-bodied Belgian-style blonde ale with saison-like sour fruiting, mild peppery hop spicing and fungi yeast mustiness weighed down by ethanol astringency. Unspecific orange-peeled coriander and clove spicing fades into the mist as inconsistent green apple, peach and pineapple tartness gets buried beneath. Salted white and black peppering seasons the backend and a hint of pink peppercorn rides slipshod.

Mouth-puckered Munich-styled dark wheat ale seems stylistically off-center, yet its eccentric sour ale tendencies may win over dry wine drinkers. Vinous green grape bittering, oaken cherry tartness and light lemon licks bring unexpected opening salvo as sweet Vienna malts get pushed back. Raw molasses acridity adds dank sinew. Plantain found in deep recess.

Middling kight-bodied summertime fodder splatters orange and grapefruit peel bittering across phenol hop-oiled astringency and soily earthen musk. Lemony midst picks up resilient fusel alcohol burn that may scare off softer palates.

Well-balanced high profile IPA brings refreshingly brisk tropical fruiting to piney hop-oiled juniper sharpness. Similar to brewers’ earthen-grained Blonde Ale (only its herbal hop influence brings richer, dryer temperament). Strangely, for a summer ale, spritzy citric pep is just an afterthought. Instead, rye-breaded pale malts fill the gap a tad.
WATERFRONT INDIA PALE ALE
Murky citric-grained dankness and musty fungi herbage closer to an earthen English ESB. Not only stylistically lighter, but also less fruity and piney than typical IPA.
WATERFRONT BLONDE ALE
Mild lemony hop spicing enhances spritzy carbolic thrust, dirty grain musk and casual herbal nip. Toasted French bread base picks up slick metallic lick.
AVIATOR DEVILS TRAMPING GROUND TRIPEL
Vigorously fruited herb-spiced tripel with sugary Vienna malting and moderate Saaz hop bittering makes for devilishly delicious dessert. Juicy pineapple, peach, nectarine and marmalade fruiting commingles coriander-spiced banana daiquiri respite enveloping white-frosted yellow cake sweetness. Sharp white-peppered basil and sage snip adds further distinction to well-balanced surety.
