DOCK STREET LA BIERE DES AMIS SAISON

Elegantly detailed and highly sessionable saison (with billowy white head above straw-paled body) brings farmhouse-styled airborne minerality to herbaceous citric fruiting. White-peppered lemon zest and yellow grapefruit souring seep inside leathery fresh-cut grassing as lemongrass, cardomom, basil and thyme fill out the midst. A terrific collaboration with France’s Thiriez Brasserie.
 

FLYING DOG SINGLE HOP CENTENNIAL IMPERIAL IPA

Judiciously flavored Alpha-hopped beauty (with hidden 10% alcohol luster) loads pine-fruited juiciness across floral juniper bittering to its biscuity dough bottom. Tropical mango-banana-pineapple-pear conflux and massive apple-candied sweetness contrast orange-peeled yellow grapefruit souring. Bright citric-floral Centennial hop aromatics prove stylishly authentic.

DOGFISH HEAD BIRRA ETRUSCA BRONZE ALE

On tap at Shepherd & Knucklehead, curious copper-bronzed strong ale from ancient Afro-Italian recipe brings herb-spiced pomegranate juicing to hazelnut-floured chestnut honey, sarsaparilla-like Ethiopian myrrh resin, peppery patchouli-oiled hops and perfumed floral potpourri. Tart lemon-limed bruised lemon, tannic grape, green raisin and Granny Smith apple nuances increase upfront citric souring while contrasting mild cotton-candied sweetness.

(STILLWATER) TABLE BEER

Reliable gypsy-brewed Belgian pale ale integrates Saison-like sour fruiting with airborne barnyard minerality, floral-dried potpourri and residual herbage. Initial lemon-soured green apple, apricot and pineapple fruiting sidles white-peppered lemongrass, peppercorn, basil, thyme and sage as well as horse-blanketed hay, alfalfa and wheatgrass earthiness. Marble rye-breaded malting underscores sessionable ‘table beer.’ 
 

KANE QUAD

On tap at Shepherd & Knucklehead, reliable mahogany-hued Belgian-styled quadrupel (with gorgeous brown-bubbled cascading head) offers red-wined dried fruiting to candi-sugared crystal malting. Musty plum-wined dried prune, sugared fig, sun-dried raisin, blackberry and black cherry overtones pick up molasses-soaked burgundy and bourbon illusions plus wavering stove-burnt coffee and rye chocolate remnants.
  
 
 

KANE MALUS

On tap at Shepherd & Knucklehead, musky ruby-browned Belgian strong dark ale (brewed with local cider and spices) brings champagne yeast wining to fluctuant prune-caked sour fig, dehydrated plum, black cherry and candied apple illusions. Spiced cider reluctantly penetrates burnt-sugared caramel malting to sweet cinnamon apple finish. Leveraged red apple juicing disguises hefty 9.7% alcohol volume well.
