VICTORY YAKIMA GLORY I.P.A.

Wondrous updated version of Yakima Twilight (circa 2011) better defined as mahogany-hued Cascadian Dark Ale (or trendy Black IPA). Abundant citrus splurge and resonant stone fruiting more pronounced than blackened hop char. Smooth dark-roasted caramel malting and powdery cocoa acridity harmonize well with grapefruit-soured, prune-stewed cherry-berry conflux. Resinous pine nuts crease burnt toast bottom.

Brewed in conjunction with established microbrewers Stone and Dogfish Head, Victory’s version utilizes a boatload of complexities to disseminate parsley, sage, rosemary, and thyme seasoning. Crisp water base underlies clover-honeyed floral-spiced lemon peel bittering. Subsidiary coriander, allspice, and ginger drape piquant peppercorn insistence. Tangy lemon-peppered grapefruit-tangerine-orange briskness shines through busy herbal finish.

Pour slowly hazy golden summery saison or billowy foam will coat glass of moderate-bodied compost-scented Belgian-styled farmhouse ale. Fulsome carbolic spritz indulges black-peppered grassy-hopped bittering, nearly overwhelming candi-sugared lemony grapefruit tang glistening above creamy mildness and dry earthen floral nuance.
